Last night we had dinner at Corey & Anna's. They invited us over to try Anna's version of White Chicken Chili. I had never heard of it, but it is actually very good. It even passed the Hubby test and he is the most picky eater ever. I think this will be a new recipe we use often. I thought I'd pass it on to you. Enjoy!
Ingerdients
3 chicken breasts
2 TBSP of butter
1 TBSP of garlic salt
3 Cans of chicken broth
2 packs of white chicken chili mix
3 Cans of great northern beans
1 tsp or less of Cajun/creole seasoning
(This makes it VERY spicy)
2 Cups of water
1 TBSP corn starch (to thicken)
Directions
Boil chicken. Take the chicken and break it up into strips and set it aside. Simmer butter & garlic in a large boiler and then add broth,water, chili mix, seasoning, and beans (add 2 cans as is, but mash up the 3rd can before adding it). Boil for 25 minutes and then add chicken strips. Cook about 10 minutes,then add the corn starch and boil for 5 more minutes.
You can top it with shredded cheese or sour cream and it is great served with crackers.
