Carter's birthday parade...



For Carter's 9th birthday he had a birthday parade. Due to the Covid-19 virus most people aren't doing parties, so this year many people are doing a birthday parade/ drive by. You just drive by and drop off a birthday gift. Carter was so excited to see everyone! It was so sweet.

Most kind-hearted...


Zach's teacher sent us the superlative awards today. She was a little late due to having a baby the last week of school. Our little Z got chosen by his classmates for the "Most Kind-Hearted Person" award! Of all of the awards that he could have gotten, I think that he got the best one!  I am so proud of him! He is such a caring BIG hearted little boy. He sure makes me proud to be HIS mom!

A special bond...


This little girl was super excited about getting to see her brother J. Since Covid-19 started they haven't been able to see each other. Today, they had the best time laughing and playing together in the pool. It melted my heart. There is something extra special about the bond between a brother and sister. I'm just so thankful that these two still get to grow up together.

 This was out first time out with friends since the Covid-19 stuff started. We've stayed quarantined and Monica's family has also been quarantined but today we were able to get together and swim. We had such a good time! It was a much needed SPLASH day!

Congratulations Layla...


The "Yes I Can!"
award was presented to...
Ashton Layla



Every year our county awards the "Yes I Can!" award to a handful of children within our county. Our sweet Layla was one of those kids! She was nominated by her teacher Mrs. Witteman.  The Yes I Can! award celebrates the achievements of children and youth with exceptionalities, encouraging these individuals to seek their highest potential, and increasing public awareness of the abilities, aspirations, and personal qualities of those with disabilities. Mrs. Witteman said that the reason she chose Layla for this award was because, "She is my hero". How sweet is that?

Layla is doing absolutely amazing! She just completed her last year of prek and will be moving on to kindergarten in the fall. She will move into an inclusion class this coming year. Layla is a child like no other. She has overcome so much in her life and continues to amaze us every single day.

 She went from a child that they thought might not survive due to severe child abuse and neglect, to a little girl so full of life. It's been a joy watching this sweet baby bloom right before my eyes. She still does therapy a couple of days a week at school and in private but I don't think she is going to need it for that much longer because she has come so far in her road to recovery.

She was diagnosed last year with NF1 and underwent surgery to remove a tumor but she has had no further issues with that and we pray that she never will.

She really is doing AMAZING! This kid is a strong little girl and she is not going to let anything stand in her way of reaching her fullest potential.

Miss Layla, mama is so very proud of you! You are such a blessing to me. I love you sweet girl with all of my heart forever and always and no matter what.

Unfortunately, they aren't able to hold the Yes I Can! honor ceremony due to the Covid-19 virus quarantine but she was still excited just knowing that she was chosen for such a wonderful award.

Meatloaf Recipe...

I tried this recipe last Sunday for our family dinner and it was a big hit. It's 4 simple ingredients (however I added finely chopped bell peppers, salt, and a dash of pepper to mine). My son Jon said it was the best he had ever had. Yay!


INGREDIENTS:
1 box Stove Top Stuffing (any flavour)
1 pound ground beef
2 eggs
1/2 cup ketchup (or more if you'd like)
1/2 cup water (or a little more if your beef is super lean)

DIRECTIONS:
Preheat oven to 350 degrees and grease a bread loaf pan.
In a bowl, mix together all of the ingredients, but set aside half of the ketchup for later. Fill the loaf pan with your mixture.
Top it with the remaining ketchup and spread it evenly over the top. You can also use BBQ sauce, chili sauce or a combination of sauces. Bake for 45-60 minutes. (Every oven varies.)
Enjoy! I'd wait a few minutes before slicing it up. Serve with mashed potatoes, veggies or anything thing else you'd like!
