Salted Caramel and Apples a neat gift idea...



Homemade Salted Caramel Sauce
Yield: 1 cup
Prep Time: 10 minutes
Total Time: 10 minutes, plus cooling
Follow these easy instructions to create sweet salted caramel sauce at home. Perfect for cakes, cupcakes, cookies, ice cream, cheesecake, sweet breads and more!
Ingredients:
•1 cup (200g) granulated sugar
•6 Tablespoons (90g) salted butter, cut up into 6 pieces*
•1/2 cup (120ml) heavy cream*
•1 teaspoon salt
Directions:
1.Heat granulated sugar in a medium saucepan over medium heat, stirring constantly with a high heat resistant rubber spatula or wooden spoon.
2.Sugar will form clumps and eventually melt into a thick brown, amber-colored liquid as you continue to stir. Be careful not to burn.
3.Once sugar is completely melted, immediately add the butter. Be careful in this step because the caramel will bubble rapidly when the butter is added.
4.Stir the butter into the caramel until it is completely melted, about 2-3 minutes.
5.Very slowly, drizzle in 1/2 cup of heavy cream while stirring. Since the heavy cream is colder than the caramel, the mixture will rapidly bubble and/or splatter when added.
6.Allow the mixture to boil for 1 minute. It will rise in the pan as it boils.
7.Remove from heat and stir in 1 teaspoon of salt. Allow to cool down before using.
8.Cover the caramel tightly and store for up to 2 weeks in the refrigerator. Warm the caramel up for a few seconds before using in a recipe.

How Blaze Sees and Hears...


Last month, I took Blaze to see a new pediatric developmental eye doctor at Emory, as requested by his opthamologist. This time they were able to get a more accurate eye exam. As suspected, Blaze has moderate vision loss as well as other eye conditions. Blaze's vision and hearing problems, just like most of his other medical diagnoses they think is linked to the congenital CMV infection that he was born with. Congenital CMV is a terrible infection. Deaf-Blind Defined...
With this latest vision checkup and his hearing loss he is now considered deaf-blind child. However, to often people misunderstand what it means to be deaf-blind. It doesn't always mean your child is totally blind and profoundly deaf. Here is a better explanation from the GSAP website...

"When we hear the term deaf-blind, we often imagine a person who is unable to hear or see anything. This is typically not the case. A range of vision and hearing loss can occur in combination. Functional levels may vary from hard-of-hearing and partially sighted to profoundly deaf and totally blind. Many children who are deaf-blind also have additional physical and intellectual disabilities and complex health needs."

AND

"From the Code of Federal Regulations:   Deaf-blindness means concomitant hearing and visual impairments, the combination of which causes such severe communication and other developmental and educational needs that they cannot be accommodated in special education programs solely for children with deafness or children with blindness. 34 CFR 300.8 (c) (2)"

No Blaze can not hear (even with hearing aids). He is considered profoundly deaf and he is NOT a candidate for CIs. He will mostly likely spend his entire life not hearing, unless they come out with something new in the future for kids like Blaze. However, Blaze can see. Even without his glasses on (he hates wearing them) he can see. No he doesn't see great, but he can see. Our goal is to continue to work with these developmental vision specialists in hopes of maintaining the vision he has.

Beautiful South Carolina...


Last week, we took a few days and drove over to South Carolina to visit friends. We LOVE that place. It is so beautiful there.

His BIG day!...

Today was Z's Big day!
His very first day of school!
August 13, 2015
Today he is...
 41 inches tall and weighs 38 pounds.
He barely made the deadline to start school this year.
He will turn 5 the day before! 
He was one very excited kid!
